Mini Pizzas - My New Go-To Meal

When I first started Weight Watchers Online at the beginning of 2012, I was under the wrong impression that it meant I couldn't eat some of my favorite foods.  The beauty of WW is that you CAN eat the things you love!  I've since learned how to experiment with recipes and lighten them up and also how to put together my own healthy meals.  Now, I'm no expert and I certainly don't have a ton of time to mess around in the kitchen.  I do have three small boys demanding my attention all day, after all.

But this little gem.  This easy peasy, quick and simple, delicious mini-meal just begs to be shared.  It's a no-brainer, so I really don't know why it took me so long to figure out how to do this.

Mini Pizzas - Points Plus Value: 5


Ingredients:
1 whole wheat English Muffin
2 Tablespoons pizza sauce
6 slices of Hormel Turkey Pepperoni
1/4 cup Fat Free shredded Mozzarella Cheese
Oregano or Italian Seasoning

Turn on the broiler on the oven.  Cut the English muffin in half and toast in the toaster. Smear 1 tablespoon of pizza sauce on each half and the sprinkle the cheese on top.  Add three pepperonis to each half (I used only two on each when I took the photo, but I changed it because I like pepperoni.).  Sprinkle oregano or Italian Seasoning on top.  Place mini pizzas on a baking sheet and cook under the broiler until cheese is melted and sauce is hot, about 3-4 minutes.

So quick and simple and so yummy!  It satisfies my craving for pizza without socking me a boat-load of points and the kids just LOVE them.  Talk about an easy lunch for the boys!
